Watermelon Sorbet

So I had a watermelon at my house

My kids ate some, but not enough

It was starting to turn

Like every season turn, turn turn

So what was I to do...

Make Watermelon Sorbet

Let me say this was not nearly as daunting as I thought it might be.

Ingredients

4 C pureed watermelon (which is about six cups of fruit cut)
1/4 C sugar
Peel from one lime (no pith, just the green)
Salt (just a pinch)
1/2 C Corn Syrup

Place 1 cup of puree in with your sugar, lime, and salt and heat over medium/low until all of the sugar dissolves.

Add in remaining 3 cups of puree and corn syrup.

Continue to heat until all ingredients are incorporated.

Place mixture in a metal pan (I chose a loaf pan)

Then place in freezer until solid

When you are ready to eat you will need to allow the mixture to come to room temperature for easy scooping.

Today is the last day to vote for me at Circle of Moms to ensure that I am in their top 25 Family Blogs.  If you can find it in your heart to show me some love I would greatly appreciate it.

  4. Brilliant. Have you tried this with a concentrated juice instead of corn syrup?
