Vegan MoFo #4

I am only 4 days into my first MoFo...

But I am loving hopping from blog to blog seeing what everybody is blogging on.

Some people are super organized and have a theme for the month and there are others, like myself, who are flying by the seat of their pants.

I saw this modified food pyramid and had to share.  If only the USDA would take a look!




So today I am in a funny mood and just wanted to share some vegan food jokes.





Tomorrow I have a review of a new to me sauce, Mae Ploy sweet chilli sauce + a GIVEAWAY.

Indulge Me

Well like all good moms there are times where you just want to show off the kids.

My 5 and 3 year old are show offs when the camera is on, my 9 year old not so much (he often won't even turn around for a still shot):


I just have to share two short videos of Andrew and Caroline that I thought were pretty darn funny.

What to do when you forget

Sometimes we forget.

Like today I forgot my pictures and don't have everything necessary for the post I wanted to provide to you.

Like Friday (again not a good day for me apparently) that it is a co-workers birthday and we should have taken her out to lunch (sorry Steph)!

That being young is so much fun. 

Today I got my reminder and after all only a child who enjoys colors and dressing herself could have put together this fantastic ensemble.


My favorite part is the two different colored socks which are two different lengths.

When it comes to clothing she puts on what she enjoys and is not ashamed at all to show it off.

I do love her originality and exhuberance.

May we all remember to have such a flair and love for life.

Happy 5th Birthday

Yesterday was my son Andrew's 5th birthday.

I don't know how the time has passed so quickly as it just seems like yesterday that you were so tiny.

I just want to say that you will always hold a special place in my heart.  And when the ladies come knocking at the door (because you are a miniature Paul Newman) I don't intend to make it easy for them.

Vegan Brownie Pie

This past weekend my kids and I wanted to celebrate my husband's birthday (a little early).

I think it is because they wanted some cake love him so.

I asked him what kind of treat he would like...which I knew would be like pulling teeth.

See Kyle isn't one for sweets and really he only had one request...he wanted oreos in it.

Well of course I could accomodate him.

I decided I would create for him a brownie pie with oreo crust.


The chocolate all blended together so that you couldn't see the crust, but I promise the overload of sweet does hit you.

For Crust
20 organic chocolate sandwich cookies
1 Tbsp Earth Balance, melted

Take the cookies and smash the hell out of crush them in a gallon ziploc bag with a rolling pin.

Add your Earth Balance and then press into a spring form pan.

Bake at 350 degrees for 10 minutes.

Brownie filling was from Colleen Patrick Goudreau's The Joy of Vegan Baking (which as a side note is just a wonderful book for some very delicious desserts).

Pour the prepared brownie on top of the crust and bake for an additional 40 minutes.

The result was pure joy from my house...mainly because Caroline was so very excited to sing "Happy Birthday."

Fun Friday Foto #3

Happy Friday everyone!

Just 23 more days till Christmas.

I don't say that to stress you out, just merely to share the joy I have that Christmas is only 23 days away...WOOHOO!

My kids are enjoying this holiday time.

They got to decorate the tree all by themselves


And are now enjoying finding our "Elf on a Shelf" each day.


Have you heard about this cute book and doll


To keep it brief the elf comes to your house to watch your kids for Santa and report back as to how the kids are behaving.

What is fun is that each day the elf is in a new space watching you (Owen, who is 9, has asked to be able to move the elf around...he knows the deal with Santa).

Last night there was a very heartwarming sight.





All piled in together in one rocking chair. 

Owen was reading The Elf on The Shelf to Andrew and Caroline.

It was so nice to see him being such a big help and eagerly participating in the bedtime routine.

And yes they all dressed themselves, hence the mismatched pajamas.  I don't bother to correct them because there is quite a sense of accomplishment in being independent and making your own choices.

Fun Friday Foto #2

Well I enjoy taking pictures of my kids...I don't think that is a shocker as I feature them quite often here.

In trying to give myself an idea for today's post I decided to fall back on last Friday's theme:

I figure I have enough fun things, at least in my mind, to share that Friday's can be dedicated to fun and whimsy.

Here in North Carolina it is chilly and the cold weather, I think, has finally arrived and will stay (we had shorts weather just this past Tuesday...I know crazy right?).

One other thing I would like to share with you all, as Thanksgiving is quickly approaching, is this super cute coloring book (for kids and adults alike).

I spotted this book first over at Bonzai Aphrodite and then decided I would purchase 3 for my children (ssshhh don't tell them it is a surprise to keep them entertained at Thanksgiving while I cook).

Happy Thanksliving is super cute and is about a vegetarian Thanksgiving...however it is perfect for omnivores as well. 

At only $5 a piece (this includes shipping) you just can't go wrong.

As a side note the author Nathalie VanBalen is a self published author so she is working hard to get her name out there.

Fun Friday Foto

Yes I know "foto" is the incorrect spelling, but hey today I was feeling alliterate.

Happy Friday to you all and to all the veteran's today "Thank You."

At meals I often have a camera with me because I never know when I will want to take a photo of the kids, of more often food.

This week, at dinner, I captured a photo of Andrew that I thought was worth sharing.




He was not drinking a Newcastle (he just happens to love this glass).

It was apple juice with a little head on it.

I thought it was funny and just wanted to share.

This weekend I am going to attempt almond and rice milk (results coming on Monday...even if they are a fail).

Watermelon Sorbet

So I had a watermelon at my house



My kids ate some, but not enough

It was starting to turn

Like every season turn, turn turn

So what was I to do...

Make Watermelon Sorbet

Let me say this was not nearly as daunting as I thought it might be.

Ingredients

4 C pureed watermelon (which is about six cups of fruit cut)
1/4 C sugar
Peel from one lime (no pith, just the green)
Salt (just a pinch)
1/2 C Corn Syrup

Place 1 cup of puree in with your sugar, lime, and salt and heat over medium/low until all of the sugar dissolves.


Add in remaining 3 cups of puree and corn syrup.

Continue to heat until all ingredients are incorporated.

Place mixture in a metal pan (I chose a loaf pan)


Then place in freezer until solid

When you are ready to eat you will need to allow the mixture to come to room temperature for easy scooping.

Dough Balls

I religiously read Peas and Thank You.

You see Mama Pea is hilarious and incredibly ingenious with her recipeas (nope not a misspell at all).

So last night I successfully made what I think may be Mama Pea's signature item...dough balls.

In an effort to go raw (not bake the food) I made her light version.


All you need are dates (medjool), almonds, vanilla extract or paste, sea salt, and chocolate chips.

The only change I made was to solely use almonds instead of an almond and cashew combination (I didn't have any cashews on hand).

Now I have attempted this recipea on several occasions and for whatever reason I have failed miserably every time.

BUT at last success!!!!


I started by rolling a few for each of the kids and these were their reactions


Caroline "Oh my goodness this is so good that I just can't handle it...can I have some more?"


Andrew "That was good...can I have some more?"


Owen "I believe these might be the best thing EVER...can I have some more?"

I didn't even get a chance to hold some back so that I could save them for later.

I do have to concur with the children though.

These are delicious, quite possibly one of the best things I have ever had.

Word to the wise don't forget to read the step that tells you to remove the pits of the dates.

I sort of forgot to do that and an awful noise came out of my food processor.

Tomorrow I am so excited that I will get to show you the bounty of my weekly CSA...I am talking HUGE haul this week.

Rule Five:
It is usually understood that in order for us to get to know each other, we should talk about sports, politics, and other issues of the day. Please do not do this. The only information I require from you is an indication of when you expect to have my daughter safely back at my house, and the only word I need from you on this subject is: 'early.'

Rule Six:
I have no doubt you are a popular fellow with many opportunities to date other girls. This is fine with me as long as it is okay with my daughter. Otherwise, once you have gone out with my little girl, you will continue to date no one but her until she is finished with you. If you make her cry, I will make you cry.

Rule Seven:
As you stand in my front hallway, waiting for my daughter to appear, and more than an hour goes by, do not sigh and fidget. If you want to be on time for the movie, you should not be dating. My daughter is putting on her makeup, a process than can take longer than painting the Golden Gate Bridge. Instead of just standing there, why don't you do something useful, like changing the oil in my car?

Rule Eight:
The following places are not appropriate for a date with my daughter:
• Places where there are beds, sofas, or anything softer than a wooden stool.
• Places where there is darkness.
• Places where there is dancing, holding hands, or happiness.
• Places where the ambient temperature is warm enough to induce my daughter to wear shorts, tank tops, midriff T-shirts, or anything other than overalls, a sweater, and a goose down parka - zipped up to her throat.
• Movies with strong romantic or sexual themes are to be avoided; movies which feature chain saws are okay.
• Hockey games are okay. Old folks’ homes are better.

Rule Nine:
Do not lie to me. I may appear to be a slow, potbellied, balding, middle-aged, dimwitted has-been. But on issues relating to my daughter, I am the all-knowing, merciless god of your universe. If I ask you where you are going and with whom, you have one chance to tell me the truth, the whole truth and nothing but the truth. I have a shotgun, a shovel, and five acres behind the house. Do not trifle with me.

Rule Ten:
Be afraid. Be very afraid. It takes very little for me to mistake the sound of your car in the driveway for a chopper coming in over a rice paddy near Hanoi. When my Agent Orange starts acting up, the voices in my head frequently tell me to clean the guns as I wait for you to bring my daughter home. As soon as you pull into the driveway, you should exit the car with both hands in plain sight. Speak the perimeter password, announce in a clear voice that you have brought my daughter home safely and early, then return to your car - there is no need for you to come inside. The camouflaged face at the window is mine.

Now I think it is obvious that this was meant as a joke...at least I hope he was joking (I don't think purchasing a full suit of camo and face paint should make me worry). 

It does make you think though about how special your daughter is and that you would do anything in the world to protect her.
