This month Tina, from Mom's Crazy Cooking, announced that her cooking challenge would be chicken noodle soup.
My first thought was "Darn I can't participate."
However I e-mailed Tina to see if substitutes for chicken could be made...such as tofu.
She was receptive to the idea, so today I bring you chickenless noodle soup care of The Type A Housewife.
Her directions were easy to follow and came out very tasty.
I started things off by sauteeing my mirepoix (carrots, onions, and celery).
The process from start to finish probably took 30 minutes, which is not bad to whip up a quick and healthy meal for your family.

Then being enjoyed by Caroline who really only wanted it for the cool little noodles.

ReplyDeleteI love those cute noodles too. I serve them to my 22 year old son, who thinks they are cool too. I can't remember what they are called, but I think it starts with a D?! I will check it out at the grocery. Thanks for a great recipe!
