I love that my kids have returned to their routine, but I sure did love not having to make lunches everyday.
That being said I did want them to have a little something special, and homemade, as a treat.
I try to stay away from sending them to school with chocolate, so I searched through the ingredients in my house and found Craisins.
Lo and behold on the bag was a recipe for Cranberry and White Chocolate Chip cookies.
Ingredients:
2/3 cup Earth Balance
2/3 cup brown sugar
2 flax eggs or egg replacers
1 1/2 cups old-fashioned oats
1 1/2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1 5-ounce package Ocean Spray® Craisins® Original Dried Cranberries
2/3 cup white chocolate chunks or chips

Preheat oven to 375ºF.
Using an electric mixer, beat butter or margarine and sugar together in a medium mixing bowl until light and fluffy. Add eggs, mixing well. Combine oats, flour, baking soda and salt in a separate mixing bowl. Add to butter mixture in several additions, mixing well after each addition. Stir in dried cranberries and white chocolate chunks.
Drop by rounded teaspoonfuls onto ungreased cookie sheets. Bake for 10-12 minutes or until golden brown. Cool on wire rack.

I made my cookies small so this produced 3 1/2 dozen cookies.

In my dream world, I send Lil' L to school each day with different lunches, the box filled to the brim with delicious home cooked treats. Invariably, he ends up with a hummus roll, shop bought rice cakes and a biscuit :( I really must start trying harder, it's just not good enough!

Rachel, this is totally bookmarked! I LOVE cranberries and white chocolate combination! Is Earth Balance butter? Should I use more butter or less butter if I want to use regular butter. Sorry such a basic (?) question but I don't bake often so I don't know...
