20 Days and Counting

Well whether we are ready for it or not Christmas will be here in 20 days, for those who celebrate Hanukkah you only have 11 days.

Not that I am trying to induce any stress.


This year we've taken a pretty laid back approach to Christmas and the shopping that goes with it.  Having three kids we decided there are a plethora of toys in our house already so we should come up with about 3 meaningful gifts for each of them and then focus the remainder of the day on hanging out with family and enjoying a meal together...OF course there will be focus on food (I love the stuff).

So let me share with you a delicious treat and something that might distract you from any stress you might be under.




  • 1 1/2 C all purpose unbleached flour
  • 1 C spelt flour
  • 1 1/3 C sugar
  • 3/4 C unsweetened cocoa powder
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp sea salt
  • 1/2 Earth Balance, melted
  • 3 ener-G egg replacers
  • 3 Tbsp almond milk
  • 2 tsp vanilla extract


  • Place flour, sugar, cocoa powder, baking powder, baking soda, and salt. Mix together with a fork and set aside.
  • In a separate bowl mix together your Earth Balance, vanilla, almond milk, and egg replacers.
  • Gradually add in your dry mixture and beat until fully incorporated.
  • With damp hands form two loaves (12" x 3") from the dough and place on a greased baking sheet.
  • Bake at 325 degrees for 30 minutes.
  • Allow the loaves to cool for 10-15 minutes on the baking sheet.
  • Remove from the sheet and slice the loaves (you should get at least 12 slices from each loaf).
  • Place the sliced cookies back on the baking sheet, cut side up, and bake at 325 degrees for an additional 20 minutes.
  • Allow them to cool before dipping (or eat them as is...I promise they are delicious just like this).
These might not make you all zen


But hopefully they will give you a nice little break.  Pair these (yes you should have at least two) with a cup of hot tea, chocolate, or coffee (whatever your please is).

Alternative Giving

This time of year at my church stewardship campaigns are ramped up full speed.

Everyone wants to get their budgets in line and know what we have to work with for next year.

But should this be a topic that we discuss just one month of the year?

Or instead should it be a topic that we constantly have in the back of our minds.


I was recently part of a discussion in which we discussed ways to give and the people in the discussion were mainly focused on money...but there are so many other great ways to give.

Volunteer



This is a really broad topic but narrow it down to something that interests you
  1. Boys and Girls Club
  2. Serving food at a soup kitchen
  3. Delivering meals for Meals on Wheels
  4. Mow your neighbors lawn
  5. Lead a Boy Scout or Girl Scout troop
  6. Drive cancer patients to their treatments
  7. Clean up a local park or streets
  8. Check out local opportunities on Volunteer Match
Donate Yourself



  1. Donate blood to the local Red Cross
  2. Donate hair to Locks of Love
Alternatives to Money
  1. Link your grocery card buyers card to a local school so that they receive a portion of the sale
  2. Give away excess from your home through places such Freecycle or Goodwill or Salvation Army
  3. Handmade items that can be donated (such as blankets for premature babies)
  4. Old athletic shoes that can be made into playground surfaces
  5. Donate old blankets and towels to your local humane society
As you can see these things just barely scratch the surface...BUT there are numerous ways to give you just have to look around, see what talents you have or take inventory of the items in your house.

Not only will you be helping someone out there are studies that show helping makes us happier and healthier people.

Only 51 More Days To Go

It is shocking to me every year how quickly Christmas rolls around.

Makes me begin to wonder whether time is just moving faster.

As of today there are 51 more days until Christmas.

I love the holiday and the decorations...and the FOOD!



Wouldn't be a proper holiday without some delicious vittles.

However the commercial aspects of the season really drive me crazy.



I was walking through one of the big box stores with my kids (mid-October mind you) and Christmas decorations and suggestions for gifts were everywhere.  My kids expressed some dismay and wanted to know what, when Halloween and Thanksgiving still had to come, were we already prepping for Christmas.

Simply explained to them it was so the most money could be made on gifts.

My husband and I have for several years requested that family either give 1 gift per child or give them an experience (or money for an experience if they live too far away).

This has worked like a charm and has cut down on the massive amounts of stuff that would clutter our house each December.

So what do you do?  Do you give unabashedly or are you more conservative?

Are their certain traditions that you all have the substitutes as a Christmas gift (i.e. going to The Nutcracker ballet)?

Just so that people don't think I am crazy and alone in my thought of giving less for the holidays...I would like to share this blog post that I came across.  In it Heather has some fantastic ideas for gifts.

Hello Again

I just want to say for starters I am well.

I have been busy and caught up in life and all of the fun things that go along with having 3 kids.

I got an e-mail today from one of my favorite friends and she was a little concerned about my absence.  I realized I had to get on the stick and get back in the game.

I love blogging and I love reading blogs so I needed to carve out time to do that.

Well since I blogged last I've:
  • attended a Chikara wrestling show
  • hosted a birthday party for both my 6 and 4 year old
  • my baby girl turned 4
  • I went strawberry picking
  • went on a girls weekend for Mother's Day
The week of Andrew's 6th birthday we were lucky enough to have family friendly Chikara coming to town for a wrestling show.  The were kind enough to say Happy Birthday to Andrew and to let him pick the winner in a raffle contest.


We decided that in lieu of gifts we would give the kids a rocking good birthday party.  So we got a bounce house.  Do know how much fun 4-6 year olds have inside a bounce house?  They almost didn't want to come out for cupcakes...they were serious about their bouncing.




For Mother's Day this year all I wanted was to go to Virginia and hang out with 6 of my girls from college.  We had a blast eating, shopping, playing putt putt, shopping, and then hanging out until late into the evening.

Having my baby girl turned 4 just seems a little unreal.  In fact I really just don't know where the time has gone.  She is so much fun and enjoys life so very much that it is hard to not just laugh when you are around her.

Case in point, when my aunt sent her a singing birthday card it was cause for a dance party (and I was lucky enough to be allowed to film it).



I think that might be it for now.  I know this post was kind of all over the place, but it was things I wanted to share with you all.

Weekend Wrap Up

This post is a day late, I apologize...I like to get the Wrap Up's up on Monday.

Anyway this past weekend was a long one (I love a 3 day weekend) and it included some fun activities.

On Saturday I ran in the Color Me Rad 5k.



There were about 8000 runners, which I thought was a lot of people, taking part in this fun run (it was not timed).

It was so much fun to run through the cornstarch paint and to come home looking like a tye-dyed shirt.


My oldest didn't mind giving me a hug


But my daughter didn't even want me to give her a kiss.
In fact this was as close as she was willing to get to me:


They have already announced that the race is coming back to town next year...so I will be ready when it is time to sign up.  Hopefully I can convince some friends to join me.

Sunday was Easter.  

We have started to not give gifts to the kids.

By that I mean they have no need of toys (we have way more than 3 children can play with). 

So they woke up on Sunday to no Easter baskets but they did have some cards from family members and they each got a small bag of jelly beans.

You know what?  

They were perfectly happy.

People get caught up in consume, consume, consume, and in the end you don't need everything your purchased.

Now I don't mean to go far off track here, but the reason we don't want them to be gifted with tons of stuff is so they realize they can enjoy what they have and we can make sure quality items are purchased (quite often you end up with chintzy plastic stuff that breaks so quickly).

I'll get off my soap box and show you what I did make for the kids:


These are chocolate Easter eggs filled with vegan buttercream.

My paternal grandmother made these every year and they were the highlight of the holiday (now mind you she also put a little bit of money wrapped in plastic in the middle) but they were oh so delicious.

I have such fond memories of these that I wanted to pass this love on to my kids.

Hopefully they will appreciate them.

A Little Excited

I was pretty shocked to have it selected, I mean the recipe is very tasty, but it was neat to have someone else select it.

Oh and a little side note.  Did you know today is National Pistachio day?  Pistachios are full of nutritional goodness, not just for your heart but they also help fight free radicals in your cells (check it out here).

I don't know if you are aware but today is National Margarita Day.


Yep that's right there is a holiday that encourages you to consume alcohol.

Now I am not saying that I am against this at all...I DO love a good margarita.

I've set up e-cards to be sent to my husband every hour, on the hour, while he is at work (he doesn't read my blog...so this reveal won't ruin the surprise of receiving harassing loving messages).

For us we don't like the mushy cards, with tons of words, quick sarcastic banter is the way we roll.

Elf on the Shelf

I am one of those parents who has the Elf on the Shelf.

Before you roll your eyes, or think less of me let me explain.

I am not one of those parents who takes tons of time to have the elf wreak havoc all over my house.

Seriously who thought this was a good idea...I mean after all YOU have to clean it up:




This site is dedicated to 101 ideas of trouble...WHAT is that about?
The point of the elf is to move him from room to room so that he can "listen" and "watch" the kids and report back to Santa each night (how else could the jolly one keep up with who is on the naughty and nice list).

Yucky Ingredients


I have been absent for a little while and I apologize for that.

I haven't felt very inspired and I haven't made anything of note (so sorry no new recipe to share).

What I did want to share today was some information I received in a PETA newsletter.

With Halloween just around the corner there will be a vast amount of treats available to children and PETA put out a list (not all inclusive) of some mainstream treats that are vegan...so I thought I would share them with you:

Something else contained in the newsletter was a list of ingredients that are commonly found in foods.

As a new vegan I need to familiarize myself with these, but once I read where the ingredients come from I was completely disgusted...see for yourself (PETA was nice enough to provide some alternatives to the animal versions):

Casein—Whey’s cousin, casein is made from curdled milk. Yuck! Alternatives: soy protein, soy milk, and other vegetable milks.

Gelatin—Rhymes with "skeleton." Coincidence? I think not. Gelatin is a protein made by boiling cows’ and pigs’ skin, tendons, ligaments, and bones. Jell-O? Heck, no! Alternatives: carrageen (carrageenan, Irish moss), seaweeds (algin, agar-agar, kelp—used in jellies, plastics, medicine), pectin from fruits, dextrins, locust bean gum, cotton gum, silica gel.

Honey—Sure, honey tastes sweet, but you’ll get a bad taste in your mouth when you learn how it’s "harvested."

From a former beekeeper: "[T]ypically, beekeepers are gloved and netted to avoid stings (nearly every bee who stings will die due to her entrails being pulled from her body attached to her stinger.) Then the hives are opened as quickly as possible and the bees are ‘smoked.’ Smoke from a smoldering fire carried in a ‘smoker’ is pumped into the hive and the bees are ‘calmed.’ In spite of this, the combs are pulled quickly and many bees are crushed in the process. When a bee is hurt, she releases a chemical message that alerts and activates the hive members who proceed to attack the intruder—giving their lives in the process."
Alternatives: in foods—maple syrup, date sugar, syrups made from grains such as barley malt, turbinado sugar, molasses; in cosmetics—vegetable colors and oils.

Lard—Lard is such a gross word, it almost makes you wonder why they just don’t call it what it is: "Fat from hog abdomens." Alternatives: pure vegetable fats or oils.

Pepsin—If the thought of eating lard turns your stomach, stay away from pepsin, a clotting agent from pigs’ stomachs, used in some cheeses and vitamins.  Alternatives: microbial coagulating agents, bacteria culture, lemon juice, or vegetable rennet.

Rennet—Certain words just make you cringe, like coagulate, congeal, clot—which is what rennet, an enzyme taken from baby calves’ stomachs, is used for in cheese production. Alternatives: microbial coagulating agents, bacteria culture, lemon juice, or vegetable rennet.

Stearic Acid—It may sound less gross than "lard," but stearic acid, which often rears its ugly head in chocolate and vitamins, comes from a fatty substance taken from slaughtered pigs’ stomachs—or from cows, sheep, or dogs and cats euthanized in animal shelters. Alternatives: Stearic acid can be found in many vegetable fats, coconut.

Cetyl Palmitate—Check your head if you’re using margarine that contains cetyl palmitate, the fancy term for the waxy oil derived from sperm whales’ heads or from dolphins. Alternatives: synthetic spermaceti, jojoba oil, and other vegetable emollients.

Urea—Urea comes from urine and other "bodily fluids." It’s used to "brown" baked goods, like pretzels. Alternatives: synthetics

I am pretty sure urea made me the most ill but pepsin is right up there for me as well. 

What I really wonder though is who sat around and thought "Urine that is bound to make baked goods have a pleasing brown color."  I guess what I need to research is how the ingredients even came to be acceptable options.

Triple Threat Brownies

For Father's Day this weekend my husband had one request "to sleep in."

Well he got his wish, but I really couldn't just leave it at that. 

The least I could do was bake him a delicious dessert to go with dinner.

The tough part was deciding what type of dessert to make.

I always go for cake right off the bat, but he doesn't like that so much.  He is more of a cookie and brownie kind of guy.

So I decided to make him brownies and fill them with three different kinds of chips (chocolate, peanut butter, and white chocolate).

Triple Threat Brownies

1 2/3 C sugar
3/4 C butter (melted)
2 Tbsp water
2 large eggs
2 tsp vanilla extract
1 1/3 C all purpose flour
3/4 C baking cocoa
1/2 tsp baking powder
1/4 tsp salt
1/4 C chocolate chips
1/4 C peanut butter chips
1/4 C white chocolate chips

Combine your sugar, butter, and water.

Stir in your eggs and vanilla extract.

Combine flour, cocoa, baking powder, and salt.  Then add to wet mixture.

Mix in your chocolate chips.

Spread into a greased 9x13 pan and top with peanut butter and white chocolate chips.

Bake at 350 degrees for 18 minutes (or until a toothpick comes out clean).


As you can see I didn't go the healthy route I went completely BAD...but hey it is only Father's Day once a year.

Substitutions could easily be made to make this vegan, but my husband SOMETIMES gets tired of my substitutions and just craves treats made the old fashioned way (with fat and animal products)...who am I not to oblige, after all he helped me create three of the most precious children ever.

Happy St. Patrick's Day

Yes I know the actual day is tomorrow...

But I have a baby shower to host tomorrow and I know I just won't get a chance to say anything to you wonderful people. so today I celebrate.
