Food Lion Revamped

I was selected by Mom Central to be a Food Lion Ambassador.

Food Lion is revamping their stores and to make these changes more known they have enlisted some bloggers to go and shop at the new stores, write a post and host a giveaway.


Yep you heard me correctly I am hosting a giveaway (details at the end).

To kick things off I was sent a care package that included:


Recipe cards
Recipe box
Bamboo cutting board
Oven mitt

I was most excited about the bamboo cutting board because bamboo is an incredibly eco-friendly material.

To go shopping I received a $150 gift card.

It was like winning the lottery because for me going to the grocery store is like clothes/shoe shopping for other women.  I get giddy just thinking about the variety of food I am going to make with my raw ingredients.

I took Andrew with me and headed to the store in Chapel Hill (yes the home of that little basketball team that is playing today in the NCAA, for any of you who are men's college basketball fans).

I am pleased to show you my haul:





I did a little work ahead of time to make sure that I gathered coupons for the items I thought I might purchase and also loaded my MVP card with coupons (so cool that grocery stores are doing this now...so you don't have to remember where the coupons are you just scan your reward card).


I ended up saving $11 by having those things with me.


I am not an extreme couponer, but if I was I imagine I could have brought back quite a massive haul (although I think I did really well).

I have to say in the past I have not been a fan of Food Lion because to me the stores always seemed outdated.  I was EXTREMELY pleased with the updated store.


The floors were fresh and clean and there was an abundance or organic food (more than Harris Teeter or Lowe's Foods offers).  I would completely recommend visiting if you haven't done so recently.


Today I want to show you a recipe that I made using some of the items that I purchased.


Vegetarian Egg Rolls


1 pack egg roll wrappers
10 brussel sprouts shredded
1/2 C thinly diced carrots
1 Tofurky Italian Sausage (with sun dried tomatoes) diced
1/2 C broccoli sprouts
1 green onion chopped


In a skillet, on medium heat, put your diced sausage.


Saute for 3-5 minutes.


Add brussel sprouts, carrots, and green onion.  Saute in the pan till the vegetables brown (on the edges) and soften up.


*a healthy tip instead of using oil I used water to saute my veggies.  To do this once the pan was heated and the veggies were in I added 1 Tbsp of water to the skillet and allowed it to cook off before adding another.  I continued until the vegetables were nice and soft (al dente as you don't want them to be mush).


Take your skillet off of the heat and get your wrappers out.


I put one wrapper at a time on a plate to fill and roll up.




Put 1 Tbsp of broccoli sprouts down:




Top with a tablespoon of veggie/sausage mix:




Roll up and place on a lightly greased cookie sheet:




Brush the top with olive oil and cook at 400 degrees for 11-13 minutes and you are welcomed with this treat:








Delicious, crispy, and packed with veggies.


By baking the egg rolls instead of frying your are significantly increasing the nutritional value.


I promise you the only difference you'll notice is that you won't be left with greasy fingers.


These are best dipped in your favorite Asian sauce.  For me I used Bragg's amino acids (a low sodium sauce similar in taste to soy sauce).

Moms Crazy Cooking -- Spaghetti

It is time for Mom's Crazy Cooking Challenge and this month we are serving up spaghetti.

I know on the surface spaghetti doesn't seem like a tough challenge.

And it isn't, but what is nice is the vast variety of red sauce that everyone found.

Spaghetti is one of those dishes that just about everyone will eat (kids and adults alike).

It has been a dish I have loved since I was little so to see my kids enjoy homemade red sauce is a joy (because you know there is nothing but goodness and love on their plate).

I chose to make Tangy Tomato Sauce from Nicole of Pinch My Salt.

The recipe is simple and delicious.

To her recipe I did add:

1/2 C mushrooms
1/4 C spinach
1 tsp cognac
1 Tbsp flax oil

I put everything in the Vita-Mix so that I would have a nice smooth sauce. 

The outcome was pure deliciousness:



I chose to include "meatballs" because the kids enjoy them and they are quite a bit healthier than the real meat version.

WIAW Wholesome Goodness


Happy What I Ate Wednesday to you all!

Thank you Jenn for hosting us for the 59th week...this girl has some serious stamina.
This week I want to show you Tuesday's eats...because I think they were my favorite.

Breakfast was a cinnamon roll smoothie, seriously I can't get enough of this one (sorry but it just doesn't photograph well), and water.


Lunch was a tasty quinoa stir fry packed with kale, carrots, brussel sprouts, and spinach (my son Owen helped with all of the sous chef chopping):



For dinner (recipe is posting this afternoon) I had spaghetti with homemade sauce and meatless meatballs:



These are the meatballs I used.   The have a good flavor and more importantly a very meaty texture.



I realize that my food wasn't very green, but it did save me a lot of "green" as cooking with veggies is way cheaper than including meat.

Cleanse Day 3 & 4 and a WINNER!

First of all let me congratulate my winner Ashley, from The Vegetable Life, on the sriracha giveaway from WIAW The Day Before My Cleanse

Now let me start of by saying Happy Monday to you all.



It was a wonderful weekend in my neck of the woods. 

My aunt came down from Virginia and stayed with us till this morning.  My kids LOVE having her come down and do pretty well taking turns for her attention.

Her visit made the weekend a little problematic for my cleanse, it isn't her fault though.

See we have 3 birthdays in one month and we all got together this weekend to celebrate (Kyle on Feb 7, my dad on Feb 22, and my brother March 7).

We had pizza and ice cream (Roman Raspberry sorbet from Talenti for me).



However it meant that I sort of didn't eat what I was supposed to on Saturday night.

I was sure to forgive myself and get back on track Sunday.

One thing I do want to say about Clean is that Dr. Junger points out even if you veer off track you can get back on the cleanse and don't beat yourself up about it.

You are supposed to be taking stress and toxins out of your life not creating more.

So I may do an extra day or two to make up for the ground I lost, but I still feel really good.

One thing I did want to talk about is the type of sleep I have been having, and in one word:

WONDERFUL!

Each morning when I wake up (before my alarm every day mind you) I feel refreshed and as if nothing troubled me in my sleep.

I try to take the extra time I have in the morning to practice deep breathing (pushing out lots of CO2) and just meditate (or try to make my mind calm...which is a little difficult for me).

It makes for a more put together me in the morning so that I don't get all frazzled when there are 3 different breakfast orders and I need to make 4 lunches. 

Everyone starts off on a better foot.

You are supposed to take time and do things for yourself during the cleanse.  And I am particularly looking forward to this (i.e. massage, yoga, facial, body wraps).

This week I have a body wrap scheduled.  I don't know if I will do anything else (just depends on what awesome Groupons or Living Social deals pop up).

As aside I have noticed that there are tons of Groupons and Living Social deals for massage and the like, which is making it easy to treat myself.

Which brings me to my question of the day.  Do you use these on-line coupon sites?  If so what was your favorite/best deal?

Cream of Broccoli Soup

On Wednesday I showed you a broccoli soup that I made and promised that I would post the recipe on Friday.

Well guess what today is Friday...YEAH!

The soup was quite simple, most of the cooking was actually completed by my husband (I have to give him credit where credit is due).

Broccoli Soup

4 Tbsp Earth Balance
1 1/2 C chopped onion
1 medium green pepper chopped
4 C broccoli stalks chopped
1 C broccoli florets thinly sliced
1 tsp salt
2 1/2 C vegetable stock (or water)
2 C almond milk (unsweetened and regular flavor)
1/2 C Greek yogurt
1 bay leaf
pinch of allspice
dash of tamari
dash of thyme
pepper to taste

In a pot put your Earth Balance, onions, and bay leaf.  Saute the onions until they are transparent on medium to medium-high heat.

To the mix add your green pepper, broccoli stalks, and vegetable stock.  Continue the cooking process until the veggies are softened.

In a separate pot steam your broccoli florets.

Remove the bay leaf from your large pot and then pour your mix and almond milk into a blender and blend until smooth.

Pour back into the large pot and add in your florets and Greek yogurt.

Mix until everything is incorporated and serve immediately.

The soup was creamy and yet not to heavy (thanks to the Chobani plain Greek yogurt).

WIAW The Day Before My Cleanse



Happy What I Ate Wednesday to you all.

Just a quick check.  Have you all been ramping up your veggie in-take?

If not Jenn, Peas and Crayons, and I would like you to do so (your body will thank you).

So I titled today's post "The Day Before My Cleanse."

For Lent I decided I would do a cleanse and I will post all of the details tomorrow.

But today I give you my Mardi Gras (Fat Tuesday) eats before I began limiting the types of food I consume.

Breakfast:


There is no picture for a reason...I didn't eat breakfast. 

Please don't hate on me, it was just one of those days where it just didn't happen.  I was busy with the children and trust me I made up for it at lunch.

Lunch:


Black bean quesadilla which was filled to the brim with: black beans (duh), kale (my favorite), mushrooms, onion, and a little cheese all toasted up in a spinach tortilla shell.

For a little added kick I splashed this all over the insides:


Sriracha!!! 

Holy Smokes Batman this stuff is good.

My husband keeps telling the kids it is rooster blood, I don't think they believe him (but it is hard to tell).

I have read both on Laura's blog, Sprint 2 The Table, and Jenn's that this stuff is the bomb.

It took Jenn telling me to get off my butt and order some for me to actually do it.

I am so very much in love with this that I have something special at the bottom of the post.

Back to the eats.

Dinner:


Broccoli soup made with Chobani plain Greek yogurt (recipe coming on Friday).

Food Should Taste Good Giveaway

When I saw this on my porch...I got excited:

I was given a wonderful opportunity by the good people of Food Should Taste Good to try 5 bags of chips (of my choosing) AND provide a giveaway to you all (my wonderful readers).

Can't get much better than this.

Are you familiar with these delicious snacks?

Well if not let me tell you a little bit about them. 

The company was started in 2006 with a mission to create a healthier snack using quality ingredients.  They are a good source of dietary fiber and come in 16 flavors in their 5.5 oz line: Multigrain, Sweet Potato, Olive, Jalapeno, Lime, Cantina, The Works!, Chocolate, Blue Corn, Cheddar, White Cheddar, Toasted Sesame, Hemp, Jalapeno with Cheddar, Hatch Chile and Kettle Corn.  There is a brand new line of Kettle Cooked Sweet Potato Chips with 4 flavors: Original, BBQ, Salt & Pepper, and Salt & Vinegar.

The flavors I selected were:


The Works, Jalapeno, and Salt & Vinegar (sweet potato chips)



I will start with the chocolate, because I really thought they would be the weirdest (even though Andrea from Clean Up and Eat said they were delish).  These were a good dessert chip.  Perfect alone or with a sweet vanilla yogurt dip. 

Kettle Corn fell in line next just for the sweetness it provided.  They taste just like kettle corn you would get at a street festival or county fair (just made with better ingredients...no GMO's).  I feel these are good just on their own, no need for any dips however I do need to work on a caramel dip and then they would be completely over the top.

Jalapeno I enjoyed in nacho form.  A little homemade pico de gallo and a sprinkling of cheese was all it needed.  These chips do pack a bit of heat, which I LOVE (the rest of the family not so much, but they are wusses when it comes to spice), and a make a great side to any Mexican feast.

Salt & Vinegar has been a chip I started liking when I was pregnant with Caroline almost 3 years ago.  Something about the salt & vinegar combination sat well with my stomach (which was in a constant state of flux from that little girl).  Anyway the sweet potato version ramps it up by adding the slight sweetness on top of the yummy salt and vinegar tang.

The Works...well lets just say these were my favorite (which was a really tough decision to make) but I love bagels, especially Everything Bagels.  That is exactly what these tasted like and I just fell in love.  I used a homemade ranch dip with plain Chobani Greek yogurt and was just in heaven.

29 Ways to Leap into Jarlsberg plus Giveaway


I have been selected along with 28 other lucky bloggers to write a post for you about Jarlsberg's Original Cheese Dip through Kitchen Play.

I decided that the way I wanted to use my spread was on a flat bread pizza.

I love things that are simple, easy, and fresh.

Take your favorite brand of flatbread.

Spread a layer of Jarlsberg dip on (in place of the tomato sauce).

Then top with your favorite veggies.

For me it is tomatoes, spinach, and mushrooms.

Toast it in the over at 350 degrees for 8-10 minutes and you are good to go.

Passing Daisies Mango Coconut Pancakes

Happy Monday my wonderful readers.

I am so excited to share a guest post with you all from Rachael (I'll let her have formal introductions below).

I just want to say though that I thoroughly enjoy reading Rachael's blog as she has some wonderful recipes, honest reviews of products, and a fantastic sense of humor.  She is a vegetarian with a carnivorous boyfriend.  They are a cute pair.

Hey there, My Naturally Frugal Family readers! My name is Rachael, and I blog over at Passing Daisies! I’m really excited to be guest posting for you guys – I mean, Rachel and I even share the same name (clearly our name is amazing). Mine just has an extra letter J Anyways, Rachel’s blog is great and I appreciate her sharing her blog with me!

Passing Daisies is my personal health and baking blog, which I started a little over a year ago. I do my best to feature vegetarian cooking, baking, and healthy living tips for people of all ages – and I love every moment of it. Food and blogging are two of my biggest passions in life! I love reading meeting new people and interacting with my readers, so please stop by sometime and say hello!

Today I want to share with you one of my favorite breakfast recipes: Mango Coconut Pancakes. Holy crap, are these amazing! The mango topping is just divine – so sticky and sweet. I know the picture doesn’t do them much justice, but I seriously recommend trying this recipe for yourself. They are based off of my Cinnamon Coconut Pancakes, which you can find the recipe for on Passing Daisies.



Mango Coconut Pancakes
Makes 8 pancakes


1/2 c. unbleached all purpose flour

1/2 c. whole wheat flour
1/2 t. Stevia
2 t. baking powder
1/2 t. baking soda
1/4 t. salt
1/4 t. cinnamon
1 c. almond milk
1 t. vanilla
2 T. Earth Balance Coconut Spread, melted

3 T. unsweetened coconut flakes
Very SMALL amount of oil for frying
Mango Topping
2 mangos, diced
4 T. agave nectar

1. In a medium bowl, combine flours, Stevia, baking powder, baking soda, salt, coconut flakes, and cinnamon.
2. In a smaller bowl, combine milk, vanilla, and melted EB coconut spread.
3. Combine the two mixtures and whisk until batter is smooth.
4. Heat a SMALL amount of oil in a large skillet over medium heat. To do this, you can just lightly wet a napkin with oil and rub on the bottom of the skillet.
5. Using a 1/4 c. measure or a large ice cream scoop, pour batter into heated skillet, making only one pancake at a time.
6. Cook until you see bubbles forming on the top of the batter, then carefully flip pancake and cook until the other side is golden brown.



For the Mango Topping:

1. Place mango and agave in a saucepan over medium-high heat.
2. Let cook until agave has evaporated, leaving the mango sticky and sweet and golden brown. 
3. For added flavor, allow the mango to cook until caramelization starts to occur. 


Assembly:

Take a pancake, drizzle with agave, place a spoonful of mango on top, and sprinkle with more coconut flakes. Yum!

WIAW A Very Good Find

Happy What I Ate Wednesday to you all.

Thank you Jenn for hosting us.  Can you believe that there are way over 100 bloggers who each week post a days worth of eats for everyone to peruse?

I am completely excited by that fact and I just a little mad that this week my post is going up in the evening when typically I have it ready to roll first thing in the morning.

What can I say we have a new dog (pictured here) and he takes up the time I would have devoted to crafting this post on time.

Not to say that this is an excuse just a mere explanation. :)





Here are my eats from yesterday, the last day of January.

Breakfast was made under duress lovingly by my husband.



1 egg (omelette style), topped with a little bit of cheddar cheese from our CSA (Community Supported Agriculture), kale, and tomatoes, on a toasted Flat Out whole wheat flatbread.

Very filling and a great way to start my day.

Mid-morning snack was a Laughing Cow swiss cheese wedge and wheat thin crackers.


For lunch because I didn't have any leftovers to take with me I instead opted to try this Cedarlane lasagna and I have to say it was pretty darn tasty and a good choice in a pinch.


For dessert mid-afternoon I had 1 of 3 squares from this delicious chocolate bar from Indahphoria.  This is bar out of this world and just a little bit really does do you.


For dinner, I must admit, I failed to take a picture (seems to be a down fall of mine).  We had black bean cakes with mashed potatoes and steamed broccoli.

The black bean cakes were the same recipe I made here, and I promise they are absolutely just the best I have ever had.

January Foodie PenPal

I am excited to share with you my Foodie PenPal recap.  Let me thank Lindsay for getting all of us paired up and for hosting the link party.

I sent a box to Molly over at Hungry, Hungry Runner if you would like to see what I sent.

However today I want to talk about what I received, from Rachel (who is a reader not a blogger).

Rachel, like myself, is named Rachel and a vegetarian.

She graciously sent me a wonderful box filled with these delectable goodies:





I love getting Trader Joe goodies since I don't have one near me (always such interesting things to choose from there).  So the raisin rosemary crisps and mango slices were a nice surprise and very delectable.

She included one of my favorite post gym snacks, Larabar.  I didn't even get a nibble as my son Andrew made off with it.  Such is life with kids.

Rachel also included several single serve packets of peanut butter, which I love to put in my lunch for work.

The "piece de resistance" however was the salsa. 

I am a HUGE fan of things spicy and this hot salsa certainly hit the spot.

WIAW The New Addition

Well things have been a little crazy at my house.

See we have a new little addition that weighs in at 8 lbs.

Nope not a baby, and I know my mom just breathed a sign of relief.

Having 3 kids people tend to think you are a little crazy and get a little anxious when you say new addition.

I am proud to say that our newest family member has 4 legs and if just the cutest Yorkshire Terrier Mix.


We taught the kids what "irony" means and named this little fella Zeus.

We got him from a rescue, Cedar Farms, from Mocksville NC (which yes is out in the middle of nowhere).

However it was completely worth it because the dog immediately took to Andrew (who is 4) and he hasn't left my childrens side since.

Now let me move on to the food, because really that is why we are all here.

Quick shoot out to our lovely host Jenn from Peas and Crayons who weekly hosts us at her blog (if only she would host us at her lovely house) to share the food we've eaten for a day.

Here are my foods from Tuesday.

I have to say breakfast has started out one too many times like this for me, Mediterranean egg white sandwich from Panera (I might be a little obsessed, but seriously the tomatoes on this are DELICIOUS)


Lunch was eaten at my favorite spot, Lucky 32, where I had eggplant creole and a side of mashed potatoes.  AAAA-Mazing!


Dinner I failed to capture a picture, and I apologize for that, but I had vegetable noodle soup made from scratch by my loving husband.

It was a very delicious day of eats but one that I can't repeat often (too many calories)...but small indulges are not a bad thing.

WIAW Happy Birthday!



HAPPY BIRTHDAY WIAW...you are officially 1 year old.  What an exciting day and thank you Jenn for bringing us into this wonderful mix so that we can peep at what each other eats (even if it is just one days worth).

We will have to virtually share this delicious cake


Now onto the eats!

Well this is Monday for me.

The day started off with my kids begging me to take them to Panera (no school and no work on account of the Martin Luther King, Jr holiday). 

I am not a hard sell as I absolutely love that place and they know it...so they manipulate me easily.

For breakfast I had the new Mediterranean egg white sandwich


This was incredibly filling which meant I needed no morning snack and I barely had lunch when I ate half of this peanut butter and strawberry preserve sandwich.


Dinner rocked!

I am just going to say it because I am super proud of the creation I put on the table.  Spinach and artichoke stuffed phyllo with a side of ravoili.


It was delicious, healthy, vegan, and easy to make.  Who knew phyllo could be easy to work with.

I posted the recipe yesterday (here) so if you too would like to enjoy this please help yourself.

All in all I was very pleased with my eats and I hope you will visit Jenn over at her blog Peas and Crayons to see what other fine bloggers have eaten.
