Emmy's Macaroons

I was lucky enough to be allowed to sample Emmy's Organics delicious/raw/vegan macaroons.

The most difficult part of this assignment?

Deciding which flavor to try first.

I was given six delicious flavors:


Coconut Vanilla, Choco Chili, Dark Cacao


Lemon Ginger, Mint Chip, and Choco Orange

I surprised myself and started with Coconut Vanilla (I thought for sure I would tear into the chocolate).

I was kind enough to share these with my kids.  My daughter thought they tasted like vanilla ice cream...just not cold.

I have to agree with her the vanilla had a nice light and pleasing flavor.  A completely fantastic way to end a meal.

The only flavor I did not try was the Choco Chili...I don't like the two mixed together.  So I gifted them to a friend of mine, and he thought they were wonderful.

So I mentioned that they are delicious but they are also made with a short list of ingredients (always a plus sign in my book).

The coconut vanilla are made up of seven things (all of which I can pronounce and more than likely probably have in my pantry):
  • organic raw shredded coconut
  • organic raw agave nectar
  • non-gmo almond flour
  • organic raw coconut oil
  • fair trade vanilla flavor (alcohol-free)
  • raw vanilla bean
  • himalayan crystal salt.
Not only does Emmy's make a delicious and well thought out product but they carry that through to their packaging.  The macaroon packages can be composted.  How cool is that?

I love getting behind companies that subscribe to the same types of ideals that I do.

I am happy to say I would recommend these to everyone...you just need to like coconut!

Pinterest in the Raw

Last Friday I was overcome with chocolate.

I feel a little guilty about the copious amounts displayed...ssssssooooooo this week

I decided I would show a healthier version of my Pinterest loves.

I am very intrigued by raw food. 

I have only attempted one raw dessert and it was from Natalia KW's book Cupcake Heaven.


They were quite tasty, but for whatever reason I have not gone back to raw. 

So I am feeling inspired and hopefully I will actually make some of these glorious foods:

My Weekend Fun

This weekend was an adventure and I tried a many new things. 

I relied on the wisdom of my fellow bloggers to accomplish a few tasks.

First up Mama Pea from Peas and Thank You

On Sunday there was a cry from all 3 children for donuts for breakfast. 

Alright I can hang with that but I will have a healthier, and vegan, version to present to them. 

Enter Mama Pea Chocolate Glazed Cake Donuts:


My donuts didn't photograph as well as the mini-muffin version...but oh my word these are fantastically delicious. 

In fact I just got a bite and the children consumed the rest. 

Oh well just an excuse to make them again.

Next up Laura from Spint 2 The Table.

I decided to take the leap and sprout my own chickpeas.

And you know what....it worked.

I started out with them looking like this:


24 hours later they looked like this:



48 hours later they looked like this:



Laura has perfect directions here, and I promise any idiot can do this (as I am one of those idiots...who is no longer afraid to sprout her own food).

Now you can eat the chickpeas just like this but I knew I wanted to make them into raw hummus.

For that I turned to JL Goes Vegan and used her recipe here for the most delicious and potent hummus I've had to date.




I think the next time I make it I will use 1/2 a lemon and maybe only 2 cloves of garlic (to make it more kid friendly).

The potency of the raw food really hits you and is just amazing.

So amazing you might want to get a start on your spring cleaning (or not).

I did do a little spring cleaning and all I needed was this:



I put the baking soda into the sugar shaker (empty shaker I might add) and sprinkled it on my area rugs.

Wait 15 minutes  and then vacuum the rugs.  This helps freshen and deodorize your rugs (works on carpets as well).

At 70 cents a box baking soda is a tremedous value and a lot more eco-friendly then some of the more toxic and perfumed cleaners you can find at the store.

So I hope this post inspires you to try new things and strive for a more ecological and economical way of living.

Wholesome Sweeteners - Raw Honey

I was given an opportunity by Wholesome Sweeteners to try their organic raw honey.


Oh my this stuff is so amazing, compared to regular honey.

When you open the jar just look at that amber goodness:


It is so thick and creamy, with a delicious mild honey taste.

Now you may be asking yourself how do they ensure that their honey is organic?

Check out Wholesome's site here and they explain who the beekeepers are (in Mexico and Brazil).  They discuss the fair trade price, how the honey is kept organic, and how they process RAW honey.

It is absolutely fascinating to see all that goes on and how our purchase of fair trade products support communities that we would most likely never have the opportunity to come into contact with.

So now that I have this amber deliciousness what did I do with it?

Well I made these:


These are gorgeous raw mini vanilla bean cupcakes.

I got the recipe from this fantastic raw dessert cookbook.


I mean look at this awesome cupcake (this is on Caroline's wish list for her birthday in May):


The honey mixed in so easily with the other raw ingredients and it really added a richness to the texture.

I put a little surprise in my cupcakes:


A little bit of strawberry freezer jam to make these extra special.

Believe me just 1 mini cupcake is enough.  The nutrients packed into the cupcake make you fuller quicker, thus requiring less dessert.
